Shunoko is casual sushi omakase restaurant.

 

While respecting traditional craftmanship of sushi making, we source seasonal ingredients from Japan to Portugal to find and create unique flavors of our own.

Our natural wine pairing is another example of our unique identity.

 

Leave it to the chef to enjoy 17 course omakase menu or pick your own from our a la carte menu to explore and enjoy our simple and passionate sushi.

Been grinding myself to sushi craft since 18 years old, following foot steps of my father.

​

Opened small take out shop in 2013  on Roncesvalles "sushi nomi"

​

Moved to St Clair in 2018 with current name "shunoko"

​

​Moved to Yonge st in 2023, my dream come true concept.

​

Nothing pretentious, simple and passionate sushi is what I do.

Our sushi rice starts with home made umeboshi (pickled plum) 

getting the Ume in its season to be brined with just roasted salt and dry under natural sun light for a week and then bottled to be preserved. our umeboshi has been aged 3 to 5 years. They are used in our sushi rice vinegar mixture to add natural sweetness, saltiness, tartness, sourness, umami and 

help with digestion.
